Wet aged these chuckies (8lbs) for 3 weeks, smoking them tomorrow. Planning to smoke at 250 till they hit 165 then foil pan lidded to 195. Cube and finish in foil pan till sticky and delicious
 
Looks like your well on your way. I'll be waiting.
