Picked up a 2.8 lb. chuck roast on sale. Perfect timing since I've been Breaking in the new MES 40 Gen 2.5.

Rubbed it down in some Worcestershire sauce and maple syrup mix...then covered it with Jeff's rub.

Smoked on 240 till the IT reached 160....double wrapped with some pear juice...then back in the smoker til IT hit 200.

Left in the smoker and dropped the temp to 100 for one hour.

Have to give credit for the instructions I followed above to Bearcarver....

Looks great.  I just smoked a chuck roast last weekend and now I am hooked.  I really like the sweet and savory idea for the smoked chuck roast.  Thanks for the inspiration and pics.
