This is going to be a 7 day marinade.
My marinade follows the pics.

3.21 lb chuck.

Mix (cinnamon stick is opt)

Water and boil.
Completely cool before adding the meat.

I put in a vac bag, you can use whatever container you like.
Flip daily for 7 days.

My marinade.

1/4 cup pickling spice
0.154 gallon water
sea salt 50.96g
cure 1.........5.1g

See ya in 7

I added the cure after the marinade cooled, mix in good.
 
OMG, looks delicious and easy enough that I could make it. One problem, where do I put it in the never ending, continually growing list. Argh

Same thing different smell.

Getting this done today.

Got my charcoal firing up. This will be just to get the hickory splits going.

Got the chuck all rinsed and the larger spice off.

Going with a very light mustard rub and then patting on this.

While prepping i have the smoker puffing TBS with hickory splits. Prep on the heat has been an hour.
