I usually use brisket, but we had this chuck roast in the freezer left over from a Kroger two for one sale. Mrs. Smoke wanted it gone! Best way to do that is invite some friends over for chili!

This is my first swing at smoking a chuckie like a brisket. I found a lot of good info here. I sprinkled it with Worcestershire sauce, rubbed it with Cattlemen’s Smokey Chipotle, and let it sit overnight. I ran the smoker at 275 for fours hours and it was well into its stall at 160. I pulled it, wrapped it in paper, and put it into the oven for two more hours until 190. For chili, I think next time I will stop at 180. I don’t want it to shred while simmering in the chili pot.

Man, there won’t be any left if I don’t quit nibbling. Very juicy and tender. Mrs. Smoke gave it two thumbs up and wanted seconds.

Nice. Great idea, I have done "poor man's" (which isn't cheap anymore) burnt ends and Mississippi Po Boy but never thought about doing this to go into chili. I have thrown a little smoke on beef, venison and wild goose that has gone into chili but those were only on for a couple hours
 
That's the way to go. I have cooked Malcolm Reed's chili recipe several times and he uses boneless chuck roast. Really good...

Looks great! Chuck is higher priced than brisket here most the time or I'd eat it often.

Food Lion has boneless chuck "on sale" this week for $5.99/lb. But they don't cut them at the store so you're stuck with whatever they get in...
 
The other roast that was part of the two for one sale was used for shredded beef tacos.

I rubbed it with taco seasoning overnight, smoked for four to five hours, then brazed it in a Dutch oven with a chili sauce for five hours. I puréed the leftover sauce and used it for taco sauce. It is really tasty!
 
I way-over salted a chuck last summer. Didn't know it until it was time to eat. Froze it then used it in chili last month. Turned out great.
 
@OldSmoke That chuck looks great! Could have just eaten it like that, I bet the chili was Awesome!!
 
If I made that chuck it would never have made it to the chili pot!

I usually make chili out of leftover brisket and it's always a big hit. This is a great idea to just make some chili!
