I usually use brisket, but we had this chuck roast in the freezer left over from a Kroger two for one sale. Mrs. Smoke wanted it gone! Best way to do that is invite some friends over for chili!
This is my first swing at smoking a chuckie like a brisket. I found a lot of good info here. I sprinkled it with Worcestershire sauce, rubbed it with Cattlemen’s Smokey Chipotle, and let it sit overnight. I ran the smoker at 275 for fours hours and it was well into its stall at 160. I pulled it, wrapped it in paper, and put it into the oven for two more hours until 190. For chili, I think next time I will stop at 180. I don’t want it to shred while simmering in the chili pot.
Man, there won’t be any left if I don’t quit nibbling. Very juicy and tender. Mrs. Smoke gave it two thumbs up and wanted seconds.
