I stumbled across this site by accident, and haven't stopped reading yet.  I started smoking meat a couple years ago.  Have done chicken, country ribs, bacon wrapped pork fillets (oh yeah, those are awesome) and like to do jerky.  I have a Grill Pro vertical propane.  I am searching for info on how to better regulate temps.  Have a hard time kepping it down under 200*.  I have seen about the needle valve and also the thermostat/valve/pilot mod.  I am looking for a good picture heavy tutorial on this setup.  I'll keep searching.  Thanks.  Lots of great info here.
