I'll be cooking for Christmas Eve, not Christmas Day. I'm not sure what I'm going to make then. My butcher will sell cured but uncooked hams if given a weeks notice, so I may do that. I might do a simple pork loin, or maybe some pulled pork. Then again, I haven't done a chuckie lately, and those can be pretty good.

Oh, decisions, decisions. I suppose if I do the pulled pork, I can also use it to make a green chile enchilada casserole and it'd be more NM traditional except for the pork rather than chicken.
 
Ready to cook ham, will smoke it agian at 220. with a mustard base and a rub on top of that, and thinking about doing some smoked scallop spuds to go with, in idaho gotta have spuds.
 
Weeeell, I just found out that I am cooking on Christmas, not Christmas Eve, and it'll be the pulled pork, both for eating straight and enchilada casserole. I think that at about 5AM I may also throw a rack of baby backs in there for a very nice brunch.
 
I'll be cooking on the 23rd for a party of around 20-30 friends (You never really know how many). Firing up the UDS around 7am. smoking a Boston butt and 4 whole chickens. Should be plenty seeing as how the main diet will probably be beer! There's definitely gonna be a Q-VIEW
