MERRY CHRISTMAS SMF! hope everyone has a safe and lovely Holiday!
Made a stuffed loin and double smoked Ham for Christmas Eve..
Started with a 5lb loin..sautéed some onion garlic SPO with spinach and butter.. butterflied the loin.. applied the fillling along with some goat cheese
Quick youtube video to teach me to do a butchers knot.. pink string all I had :l
Olive oil, fresh rosemary and thyme. . S/P rub..
All ready for the UDS... 225* along with the loin I did a spiral ham with a mustard coat and billbos rub... and a breakfast fattie for in the morning...
Pulled the loin about 160... a little to long all my goat cheese melted out.. but still beautiful and moist..
So great! The family loved it.. as did I! Moist..tender.. goodness sake good!
