Every year for Christmas my wife and her colleague put on a party for the teachers in their building.  I am volunteered to cook stuff.  This year I made several smoked items.  A boned out a turkey, cured it, smoked it, and sliced it up.  Found some Norwegian Salmon on sale, picked it up and cured and smoked it.  Fired up the AMNS and smoked some Tillamook with apple wood.  Baked some banana breads and had some Zucchini breads frozen from the summer.  And so we began to put the feast together.

I find the boned out, cured smoked turkey goes well with dried apricots, dried plums, dried cherries, smoked pecans, smoked walnuts and dried figs.

The bread plate went together well.  The salmon tray had to be doubled up as the teacher hammer the salmon hard.
