Quick and easy smoke for dinner today before the game. Brined some wings for a day. They were half the package from Costco bulk package, about 30 wings. Dried them off and coated with salt and baking powder and let sit in fridge on a rack for 8 hours. Sprayed with avacado oil and sprinkled on kosmos buffalo hot wing rub right before cooking. Smoked at 225 for 30 min in the yoder and then 275 for around an hour til IT of 185. Turned and rotated halfway through. Sauced half of them and left remainder dry. Turned out really good.

Put the wings into a pan and then into the vevor food cooler. Took a couple of racks out and put the griddle in for the shrimp to preheat. Precooked the bacon half way in the oven first. Last time I made these there was too much rub and salt so I only coated lightly after wrapping in half piece of thin bacon and securing with a toothpick. Cooked til bacon got little crisp to it and IT of 140. One of my fav treats. Had a salad, carrots and pepper slices for sides.

Good looking wings and that shrimp looks really good. I going to have to try that shrimp like that.

I've yet to perfect bacon wrapped shrimp.
 
I see bacon wrapped shrimp on my future soon. Did you pre cook the bacon before wrapping the shrimp?
Through my trials and tribulations, have to use thin cut bacon. It has to be precooked halfway. If you dont the shrimp will overcook trying to get some crisp on the bacon. The CI skillet really helps in this regard. I cook the bacon in the oven on a lined cookie sheet at 350. I use half a piece per shrimp. I did double up several shrimp so the number of bacon pieces matched the shrimp. I found that i get the perfect amount of crisp and shrimp at 140. I preheat the griddle at 375. Takes about 2 - 3 min per side.
