First off, congrats to Sowsage Sowsage "Travis " for the beautiful plate he entered in the throwdown and a well deserved win. Blew me away with the fantastic plate and votes
So here is mine. Thanks for looking David

Jamaican Chipotle Pineapple Jerk Glazed Double Smoked Ham, with Coco Bread, Spicy-Sweet Roasted Sweet Potatoes and Pineapple Slaw

First the Ham, all spiced and rest while I get the smoker up to heat. Than in for 1hour 45 minutes at 325deg. with mesquite chunks

While that is cooking make the Glaze. Mix all and bring to boil, lower heat, reduce to about half amount.
Brown sugar, Maple Syrup, Bourbon/rum, chipotle chilies adobo, and pineapple juice

When ham was ready ,bring out of smoker, House oven up to 400deg. glaze the ham approx 25 - 30 minutes

While all that was cooking I also made the CoCo bread and the Spicy sweet roasted Potatoes and the Pineapple Slaw

Love this bread , little sweet and fluffy , holds together well while filling and eating, I now make this a lot

That was a lot of great work and beautiful results! The plating looked like a magazine, awesome job David! You must have been having some Caribbean or Cabo fantasies up there in Nova Scotia!

Appreciate it , yes going through Caribbean withdrawals. And in this deep freeze , it is not helping.
We try to go south each year , but not for the last few . Just because of the way it is now.

Miss the real foods from the south, I try to make them , just not the same ( maybe because no Palm trees and sand between my toes )

Soon we hope . Would love to get back to Jamaica, we were married there

David, the color on your ham is outstanding!! No doubt in my mind a lot of love went into this cook! Very nice work!. Id love to try my hand at making the CoCo bread.

It was real fun to do, and the Coco bread is great I really love it . There are a few recipes on the web. I will post the one I have as I found it nicer . After doing it a few times I have it down pretty good now.
I will post in a minute. It looks long but it really is not

Wow David, that looks amazing...and you confirmed my suspicions. I had a gut feeling that might have been your entry. I was at an impasse on how to vote though. Some great looking food all around and a tough decision.
