I am somewhat new to sausage making and yesterday I did my first ever batch of smoked sausage links. Last year my wife bought a Gander Mountain chipotle kit and I blew off making it till my neighbor gave me a pack of chipotle venison sausage and I really liked it.
I mixed it 50/50 venison/pork and ground twice. I fought my smoker all morning but overall I think they came out ok. I don't like the grill marks on them so I need to make some rods to hang them next time. They came out a little darker than expected and the casings dried out more than I expected although when I cooked a link for lunch they are juicy on the inside. I used pecan wood for smoke.
