These are Hatch Chile. Nothing wrong with them, but we prefer our Colorado grown Pueblo Chile. This is fun though because we love our cousins to the south in New Mexico, they do have great Chile and they come off early. So here we go.

Burned these with a hand held weed burner.

Then into a tied plastic bag to “cook”. They will be delicious.
 
Add a little charred Olathe Sweet corn for salad mixed with the hatch Chile, cheese, onion garlic seasoning and Some avocado and cilantro.

That looks really good, we get hatch chili's for about 2 weeks here in WA, just bought my supply and will cook them this week. When I lived in CO, I too liked the pueblo.
