I’ve made this a few times after trying the Trader Joe’s package. I never follow the same recipe but it always comes out awesome. Very simple dish, tonight I also made turmeric rice for the side. That was phenomenal and also simple.

This was my last from nytimes.

  • 2 lemons, juiced
  • ½ cup plus 1 tablespoon olive oil
  • 6 cloves garlic, peeled, smashed and minced
  • 1 teaspoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • ½ teaspoon turmeric
  • A pinch ground cinnamon
  • Red pepper flakes, to taste
  • 2 pounds boneless, skinless chicken thighs
  • 1 large red onion, peeled and quartered
  • 2 tablespoons chopped fresh parsley

Onion isn’t needed though. But if you want go for it. Make sure to marinate it for several hours and flip it at least once. Bake at 350 for 30-40 minutes until desired temperature. Slice chicken into cubes and put in pita or wraps. Have lettuce, tomato, and cucumbers sliced and ready. The key is the yogurt dressing.

Yogurt Sauce
  • 5 to 6 ounces (2/3 cup) plain Greek yogurt*
  • 1 teaspoon lemon juice
  • 1 clove garlic pressed
  • 1/4 teaspoon salt or to taste
  • Pepper to taste
