Chicken Pie (Mama Bear Style)

OK, I confess, I stole another Recipe from Mrs Bear, as we made this to share it with Bear Jr.
Every time Mrs Bear goes to the hospital, Bear Jr & his wife Bethany make me something that will last me a few days, so since Bethany was away for a week (Williamsburg & Busch Gardens) with her Mother & Brother & his kids, we decide to make a Big Chicken Pie for ourselves, and a second one for Bear Jr. He makes a lot of stuff on his own, both in the kitchen & in his Big Green Egg, but this will be easy for him to just Nuke up whenever he’s in the mood.

So the first thing I did was SV 3 Chicken Breasts in my Sous Vide Supreme @ 146° for 2 hours. Then right into a big bowl of Ice Water to cool it down quick, and then into the fridge, until we were ready to start this adventure.
BTW: I forgot all about these Breasts, and they were in the SV for 5 hours, and they were no different than being in for 2 hours. (Flavor & Texture)
Try that with some other cooking instrument!!

The next day I chopped the 3 Breasts into little cubes & set them aside. Then I cubed up 3 nice Taters & put them in a Big Bowl. Then a mess of Mixed Veggies went in with the Taters, and mixed it well. I transferred that mixture into a Pot & cooked it until the taters softened up a bit.
Then back into a Bigger Bowl, and I added a can of “Cream of Chicken Soup” to the mix & stirred well. Then finally the cubed up Chicken Breast went in, and I mixed the whole thing, so the chicken gets warmed up some from all the other hot stuff.

Then we divided it all up into two baking dishes, and leveled it all up, before topping with “Crescent Dough Sheets”. (Bear's favorite crust)
Then into the oven at 375° for 20 minutes, or until crust is brown.

The smaller one went to Bear Jr, and we kept the Big one here at the Den.

Bear, that looks so good!! I love pot pie, have never made it but after reading this I plan to do this myself. Only thing is I may just smoke my chicken I don’t have a sous vide yet.

While we were making this, I called it "Pot Pie".
Mrs Bear grumbled at me, "It's not Pot Pie, This is Chicken Pie!!!"
"Chicken Pot Pie would have Wide Noodles in it, and No Crust!!"
I thought about that & remembered, She's right, My Grandmother's Chicken Pot Pie Did Have the Wide Noodles & no crust.

Like for sure. That is one of our favorites My wife Makes them just about the same way
Love those things. That one looks spot on, and if it were here it would be gone pretty quick.

And BTW down here in Texas we do call the Chicken Pot Pies

Ate alot of that as a kid . Also made with Dinty Moore beef stew from the can .
 
Damn that looks great! We do a lot of home southern cooking down here in TN but will definitely have to add this to the list.

Hey Bear.... GDaughter and I ate what is missing... I had 2 chix breasts in the refer that I sous-vide a couple days ago... 1 can of cream of chix in the pantry and mixed veggies in the freezer.... Pie crusts in the freezer also...

Looks real good John!
That is one of my favorite meals, but we usually make it with leftover chicken.
And sometimes we use mashed potato's for the top crust instead of a real crust.
But then it wouldn't be Mrs. Bears chicken pie!
I'm betting that the SV breasts were very tender & juicy.
Have to get the SV out & give it a try!

Western NY where I grew up that was also called a Pot Pie, but here in PA I believe it is a Pennsylvania Dutch thing where a Chicken Pot Pie is what Mrs Bear described: "Wide Noodles in it, and No Crust!!".
Anyways - looks awesome!
