Rich, looks amazing and delicious. Great write up too. I'm not very good with knife work, but this looks like something I gotta try. I prefer thighs to legs, but with the price so low on Quarters, I can expand my horizons. I'm always looking for different Chicken Thigh recipes. Excellent work and really impressive knife work.
Looks good, Rich, but a lot of work! I haven't seen quarters around here for years, but maybe I'll try de-boning some thighs. You've got me thinking. What if you stuffed some thighs with Pesto and sprinkled a little Italian seasoning on them? You could have them with Alfredo and noodles....
I'm getting lazy in my "age" and am glad to see I'm not the only one who's started using instant potatoes and gravy LOL!

That would be perfect .
I used to use deboned thighs for Spiedini all the time . Italian bread crumbs and some parm . Roll it up and on the grill . Cross cut into 3's when it was done , and like you said , Pasta and some alfredo . Really good . Adding pesto would be awesome .
