Chicken Fajita's and Refried Black Soybean

First up try make refried beans from a pot that I had cooked up. Man 2 cups of dried beans make a pot full! They came out very tender so should make good refried.

Saute some onion and jalapeno in coconut oil with a little bacon grease. Tossed in some garlic, cumin and red pepper.

Put about 4 cups from my pot of beans in.

Heated up than smashed with potato smasher. Did not like the looks so got out the stick blender and went at it. Simmered 5 minutes than stirred up. Repeated for about a hour until the right thickness. Added some more spice. Man this was some good stuff!

Now on to the blackstone. I use these marinaded chicken thighs. They are really good.

These jalapeno's go on the griddle every time now. So good. Texas candy.

These Trader Joe's tortilla have become my favorite for taco's. Just the right size and 3 carbs each. Very good.

Now which salsa? They all so good. I had the Molcajete on my eggs this morning. If you have a Mexican Market check it out. A lot of them make salsa's. Cant buy any this good in store. Plus they have sour creams that have flavor!

Looks great, especially that pot of beans!
There are several Mercados within minutes from me. The best place to go for big fat Jalapenos.
 
Very nice meal Brian. You keep on upping your game for sure. Those beans look awesome especially. Gonna give them another go soon.
