so went for a walk this morning was supposed to pick up a pork shoulder... ended up getting a whole Chicken.

I’ve never spatchcocked a chicken so that was abit of fun haha.

No idea where to start I did the forum search, made my own Rub (s, p, mustard, garlic, paprika, sugar) then got myself started.

Rubbed it up, left it an hour and then put it on the smoker between 250-275 until it got an IT of 165.

Smoked it with beech and some “whisky” (oak) Chips

Just had it on the side with Mac n cheese.

That is definitely a good looking bird you got there. I spatchcock all my whole birds unless doing a beer can chicken. Something else u might want to try is take one of those birds an make chicken salad. We make alot of that in the summer. Points for sure
 
Fantastic looking chicken.
I do all my chickens & turkeys, spatchcocked.
I tried it one time & never did one any other way since.

Awesome looking yard bird there and I'm sure it was mighty tasty too. Like buzzy said smoked chicken makes great chicken salad.

Definitely a great looking bird. I don't get to make chicken too often on my smoker but this really makes me want to get some on there soon. Thanks for sharing.
