Cooked some Italian Beef on my Lang smoker. Vid ran a bit long, but if you're interested:
I'll say this. The meat turned out great. The Au Juis absorbed a lot of smoke which gave it a flavor that I am not accustomed to tasting in a Chicago Style Italian Beef Sandwich. In the future I think I may choose to do the Au Juis on the stove top.
