Cherry Chipotle Lollipops

Cherry Chipotle Lollipops

2 cups sweet cherries, pitted (about 50 cherries)
1/4 cup bourbon
1 tablespoon sugar
1 cup fresh squeezed orange juice (about 3 medium sized oranges)
2 chipotle peppers (from a can of chipotle in adobo)
2 tablespoons sauce (from a can of chipotle in adobo)
1/4 cup apple cider vinegar
1/4 teaspoon kosher salt
1 tablespoon smoked honey

Everything in the pot except the honey. Brought to a simmer and let go for 15 minutes.

After 15 minutes, put in food processor to break everything down.

Back in the pot for another 15 minute simmer this time with the smoked honey added.

Chicken legs trimmed on large end so they stand up on their own.

Legs trimmed around middle and the top half and tendons to be removed.

A custom rub.

Smoked for 45 minutes at 350 then dunked in the sauce.

10 to 15 minutes to set the Sauce, then a second dunk in the sauce. Another 10 min or so to set that layer of sauce and time to pull them.

I know it's an older trend, but there are still people who want to know how to make them so I figured I'd share!
 
Funny, but I was checking out the kitchen implement section at the store the other day (bad habit) and saw Cherry and Olive pitters and thought to myself
"who needs those?". Now I know LOL!

I have the same kind of habits! and honestly.. I looked at 5 or 6 stores for one and couldn't find a one of them! Two weeks from now I will find 17 of them LOL That's just how my luck works!
