I was doing so well, bought the cheeses, cut them just right, placed on the rack, added apple and cherry wood that was soaked and since the weather was below freezing, I though perfect time!
Well, I had put four sticks of butter in there as well and fortunately I thought to check it after 30 minutes and decided to remove it. It does have a great flavor.
The cheese looked good at that point. My MES did do it's job, but I couldn't keep the temp down. They say that you can get it and keep it at 100 degrees or less. Fail for sure.
I shut the smoker off and left it to cool after an hour. I left it closed thinking that the smoke would finish the job, so I fought the urge to open the door. 2 hours later I opened the door and like ice cycles from my roof I had cheese strings everywhere and a puddle of mixed cheese on the bottom rack, which I had covered with foil. Lucky for me, it made clean up easy!
I decided to go to bed and tackle the issue in the morning. This morning I cleaned up the mess with the help of the dogs. I salvaged a couple bags of cheese pieces. They taste great! I had an omelet this morning for breakfast and it was just superb!
I am happy for a hobby that you can eat your mistakes! I have decided to shred all the mistakes and make a four cheese mac and cheese! Munster, Cheddar, Jack, Mozzi!
I ordered an AMNPS and some pellets from Amazon and Tuesday when it gets here, I am going to try again!
I am somewhat chuckling inside about this! I do have four sticks of nicely smoked butter in the freezer though!!!!!
