Hey folks, I was referred to this site by my buddy Billy Ray out in Kansas City area. My name is Dan, but for whatever reason, people call me CFA (Captain "effen" Awesome), so I roll with that. I've had a love hate relationship with smoking over the past year or so. The hate part being when I bought a cheap smoker ($59) from a local home improvement center. After one attempt, I was done with that thing. Then I found an older WSM that was missing the charcoal ring, water pan, and a rack. I made a ring from 6" flashing, and stole parts from the cheap thing and managed to smoke the best brisket I've aver eaten. Since then, we've done some ribs, chicken and a few butts. We always wanted to do more, but the expense and hassle of the charcoal kind of keeps at smoking about once every two or three months. That sucks. So, for Christmas, the wife and parents when in together and git me a Cajun Injector electric smoker. This morning, I set it up in my shed (it's cold and pretty windy here. I sprayed the interior down with cooking oil, cranked up the heat, and let her bake for 2-1/2 hours. I also added some wood chips about an hour into it. Afterward, I let it cool down, wiped the whole thing down with a dry paper towel, and went in to prep some chickens. I don't have a lot of patience, so, the wife knew that she'd better have something thawed for today. Right now, as it's my first time doing electric, all I did was dry rub the chickens, add a can of beer to the water in the pan, and turned it on. Hopefully another hour and we'll be enjoying our first electric meal. I have to say that my shed smells AWESOME!!!
