I was wondering if anybody had any tips on keeping dry chunks from flaring up while smoking. Right now I just place the chunks right on top of the coals and let em do their thing, problem is, when the wood gets going...it keeps going and it's near impossible for me to keep the flames down without compromising temps in the cooking chamber.
 
Try this, instead of putting them directly on the coals, put them around the sides and try not to have them touching the hot coals. I do that and they mostly smolder. Also, if they do flair up, close the damper and smoke stack.
 
I'll give that a try...beats taking a spray bottle to it and kicking up ashes.
