5 pounds of Owens Bbq Cervelet SS mix.
AKA Black forrest der hoofin SS....Baaahahaha

In the fridge. No time for stuffing today.

How does this mix differ in taste from regular summer sausage mixes?

Owens has really good mixes.

This mix has a tad peppery bit, thinking white pepper with some coriander mixed in.

Got some rain going, slight breeze and a cool down heading to S, FL. Doing a late smoke today. Going to put apple smoke to the chubs.

Did a second hand mixing and stuffed into prepared firbrous casings. Hang at room temp for 1.5 -2 hours before the smoker.

Run the meat to the end of the tube. This will eliminate an air pocket on the end.

Now to the stuffing. Used fibrous casings after they were conditioned. Squeeze the water out of them good.

Let the chubs hand at room temp for 1.5-2 hours. Dont worry your not going to die.

After put the chubs in your smoker. Going at 140* for an hour no smoke. Then to 150* with apple via the 6" Amazn grenade.

I always hang mine in the smoker or garage to dry, unless the temps are too cold!

Will be interested to hear how these taste. I just ordered some from Owens.

It was a long smoking night.

Getting apple smoke here, still day light.

Around 9pm. No smoke, IT at 149

Longer than normal because it was raining and got chilly, around 9 hrs @165
