I had a pork loin in the freezer, so I had my butcher slice it in 1¼" slices

cut pockets and stuffed with rice pilaf,mushrooms,and "fresh" italian sausage


added a little rub
Smoked @ 250º until internal temp of 165º
I placed a couple strips of bacon over them to add some flavor
