Celebrating another year

Made it to see another year. Invited a few friends over to help celebrate the 58. Got three slabs of spare ribs just put on the stick burner.

Also smoking a couple of onions. Onions didnt turn out very good first time I did them a couple years ago so thought it is time for another shot. Trying two different ways. First is cutting blooming onion style, spray with avocado oil, meat church voodoo rub and slip some butter pads in between the petals. Second one I cored the center, added chicken better than bouillon and butter, spray with oil and meat church holy cow. They are sitting on a piece of tinfoil and a tinfoil stand. Will wrap them an hour after put on. Guessing take a couple of hours til tender.

Ribs are from costco three pack. Look pretty good with quite a bit of marbling, STL cut. Coated with my homemade kickass rub.

Beautiful day outside to have a bday. Upper 90s with 110 feels like and crazy humidity broke for a cpl day reprieve. 72 out but windy. I will take it. Lets drink a cold one on the deck. Dont have a beer pole though.

Ribs look good so far and I bet those onions will be tasty! Nice views too!

That looks beautiful! I'll have to try a bloomin' onion some day, or just the individual onion petals spiced up on a rack the smoker.

Your costco has 3-packs of st louis ribs? Mine just as 2-packs. I'll have to look closer next time.

Happy 58th!!! I still remember when I was that young. :D

It won't be smoked but try a yellow onion wrapped in foil... we usually put it in the coals of a fire pit but works on grill or smoker as well. We like a little crunch left but then remove onion, slice in half and spread half moon pieces out on a plate and melt butter in each one, sprinkle with lawrys seasoned salt... dang good! My sister thought we were nuts till we tried it!
