Not long ago I saw an article or post on carving tri tip and now I can't find it.

Here's a pic illustrating the grains in 2 different tri tips

Basically, identify the grains in the tri tip, separate the tri where the different grains meet, slice each resulting piece against the grain and on the bias (slant your knife).
