Took some tenderloin steaks and grilled them up for dinner. I put a coffee rub on first. They were grilled up along with several mushrooms (ok, end of package) and a red pepper.)

I close the lid on direct cooks as while the temperature is lowered, more smoke is added to the meat. Using this technique, I can put a smoke ring on a burger. THe "House preference" is for medium well cook on the steaks in case wondered.

I used mesquite wood chips.

The steaks get sliced up thin along with the 'roasted" red pepper.

All that is needed is some sour cream and cheese and for some, salsa.

I'm going to be honest. It looked like a really good meal until I saw the shirt you were wearing. Lost my appetite after that. LMAO. Just kidding .... nice job :emoji_laughing:
