Haven’t been around for a minute so I figured I’d bring some ribs to the party. The rub is a jerk inspired rub and the sauce is an island style I came up with a few years back. Kids friends are over so I through on some chicken as well.

Rub

1 tbsp kosher salt

1 tbsp coarse black pepper

1tsp onion powder

1tsp ground allspice

1tsp thyme

1/2tsp ground ginger

Started raining a little so I retreated to the safety of the porch to keep an eye on the fire.

Smoked over oak and pecan and ready to wrap in parchment paper

Sauced, rested, and ready to slice.


Sauce is a simple sweet and sour sauce but with the Asian ingredients swapped with more traditional bbq ones. Substitute lime juice for lemon and add a little pineapple and you’re good to go.

Looks really good! Had wicked good bbq ribs in Anguilla a few years back on our honeymoon, cooked over beach wood! I’ll have to give this a try and see if it taste like the ones we had or similar!
 
Thank you! They turned out great! I’ve never had any ribs when we’ve gone to Jamaica but tons of jerk. I’ve been curious about trying ribs with some of those flavors.

Thanks Brian, this gives a very good balance to the richness of the pork. They were quite tasty and my daughter inhaled them so fast she may have ate a bone. Do love island food!

Great looking ribs! I love jerk. Been looking for a good jerk pulled pork or rib recipe for awhile now with not much luck. Will def give your rub a shot thanks for sharing!
 
Awesome have spent some time in the US Virgin Islands and the food is great there too. Like your recipe will surly be trying it out. I'm a fan of jerk seasonings for sure. Next time send out an invitation hate missing something that looks that good.
