A friend got me started on this about 2 years ago. I was doing the smoking and cooking in my gas grill with a foil pouch and some wood chips. That was a lot of hands on time... Did it once since I bought my smoker. Easiest thing there is to make and so cheap. I use it for breakfast sandwiches mostly, or just eat it as a snack.
I experimented with different cooking temps and found myself a lot happier with the juiciness of it done to mid-high 140s. I've seen recipes call for as high as 170s and that was too dry for my taste.
