I was asked if I could smoke up some Canadian Bacon but find a way to do it with out all the sugar.

The thought was to use some thing other than sugar to sweeten it up.

Does anyone know of any recipe

One way to do this is to make up your brine starting with your salt and water then add you sugar a 1/4 cup at a time. Mix it in then take a 1/2 teaspoon and take a sip-swish it around in your mouth (don't swallow) then spit it out. If you want it a little sweeter add another 1/8 cup cup and repeat the tasting.

Don't forget-you can also use syrup and honey in place of white or brown sugar in brines.

Hope this gives you an idea where to start.

I am currently experimenting with honey but was curious to see if others have used something other than sugar or honey for an example Splenda, or maybe a fruit or other natural sweetener.
