I am wanting to cook two racks of Beef Plate Ribs and I was wondering if two hooks will support them in the PBC until they finish around 202 internal? I am worried they are going to fall off into the coals at some point during the cook. Has anyone cooked them this way?

Thank you

No experience using a PBC razor bit have seen vids of folks hanging pork ribs on hooks.
They usually hook about 2 ribs deep I believe.
Maybe someone with experience will come along.

It's best to not remove the membrane on plate ribs because they can cook themselves right off the bone. I'm not sure I'd hang them.
