Although I've got 3 vertical smokers (WSM, mini WSM, Double-Chef) lately I've been either indirect smoking , or smoking with firebox in my New Braunfels el -Dorado .
Smoked ribs today in my Double-Chef, put 5 lbs charcoal in , 20 lit briquettes & set vents.
Temp never went below 225F or above 240F, never adjusted, added fuel nothing.
Well this weekend I'm on call for customer problems, usually handled on the phone & I was cooking for entertainment. I don't know that my cook was entertaining, I didn't even need to be there.
I may well go back to the indirect, for most cooks.
