Hi everyone, Many years ago I had a Brinkman water smoker. Not much info back then ( Twas before Gore invented the net ). Well I did a couple Turkeys awake all night,adding coal and water. It was delicious but very time consuming. Fast forward to being retired and loving smoked food. Just purchased a low budget Bradley from Amazon. Well for Labor day I did 4 slabs of baby backs.......YUMMMMMMm. I did a pork loin roast, The wife could not leave it alone, then Turkey leg's and on Sunday I am jumping into my first brisket. I have a 6 lb. flat. I really have to thank Jeff Philips. What I have learned is for me a digital thermometer is great and any mistake can be eaten........LOL. But so far so good. I look forward to trying many other meats. All here are a GREAT source of information.............
