Sandwich: Cajun chicken thighs tossed in my experimental dressing + muenster cheese + sourdough
The Dressing/Sauce/Spread/Whatever: Mayonnaise, mustard, tomato paste, bbq sauce, pickle juice, italian seasoning, cayennne pepper
This was originally supposed to be just a simple chicken sandwich (sliced chicken, cheese, tomato lettuce, pickle, bread) but it wasn’t until I began making it that I realized I did not have tomatoes & I can’t eat a chicken sandwich without a sliced tomato in there.
So I decided to pull out some of the fridge condiments + the tomato paste & tried to see if I could make a spread for the sandwich that would offset the missing tomato. The spread ended up being so freaking good though, that I immediately switched gears. Thinned it out with some pickle juice & made it more of a dressing, chopped the chicken a little bit smaller, tossed it together & turned it into a chicken salad. Threw the bread into a pan with the muenster cheese & a small thing of water to steam it and get that cheese a little melty while still keeping the bread semi soft.
By far the best tasting sandwich I have had in a while.
