Beef cheeks, well trimmed and then smoked over Hickory for three hours
Then braised in beef broth for another 2 hours in the smoker

I’m beginning to remember why I shouldn’t read your posts :) I end up cooking them and getting fat(ter) LOL.

When trimmed and headed to the smoker is that just salt & coarse pepper for the seasoning?

Yes, just Salt & Pepper on those.
But sometimes I use more spices.
