Still new at this and so I got the Cabelas smoking and BBq DVD and they put their Pork butts in a brine with cure for 6-8 hrs or so, just all the reading I have done on here I havent seen one with a cure, if I do a cure do I have to worry about the 140 - 4 time limit?? Also they brought smoker up to 250 for 1hr then dropped down to 150 to start the smoke??? Just a little confused

There is a Jerk rub I was wanting to try but the town seems to be out of habaneros, I'll post it here next week if I manage to make it.  I'll probably do another using the two posts fpnmf linked to.  They turned out great both other times I've done them.
