well, maybe this is gonna be a fight..... with heat! I’m struggling to get up to temp. I’m guessing it’s the two cold bricks I just put in the CC. We’ll see.
Ok! Two butts, I’m using oak ridge seasoning. I always take a family member with me to the BBQ “porn” store, to sample rubs with me for a bit, until they raise their eyebrows, and say, “wow!”
This is the second time they fell in love with the oak ridge seasoning. I prepped them yesterday afternoon, one is fatcap up, and one is down.
I’ll post progress and graphs through the morning....

First problem? Tuning plate at the front of the CC fell down! Temp spike! Lol, now I have temp in the CC! Adjusted, all is well again.

There is even a Butt Crack in there, In the first picture, and in the second one while still in the vacuum pack.

We are still wondering where it is they let you sample the rubs and swish the pallet.

We'll tear it out of him Humo, like that tore up butt. ;)

Sonny, great we could get Gnarly to share. I'm new (9 months) to the area but I recall going to that store in a previous visit to the area. It is indeed quite the store, you feel like a kid in a candy shoppe. Gnarly, when you sample the rubs how does that translate to the final cooked taste? Definitely will try to see if my palate is sensitive enough to be able to pick my favorite rub. And by the way, your two butts (pork) looked pretty awesome.
Fat cap up/down, which was better? One final question, what is a "Tuning plate"?

My interest is to see if any of my local Bar-B-Que stores might offer a "tasting bar" with a Bar Tender to help with recommendations.
Big department stores often offer make-up artists to help customers choose different types of face paint. Why not some sampling of flavors to paint your Que with?

BBQ Porn Store brings to mind that maybe you go there to fondle the knobs, or drool on the cleavage of the grill grates.
It's OK to admit it, I do the same thing. Imagining what a wonderful Butt would look like perched on the various models.
Or sizzling chicken Breasts tanning in the glow of the firebox below, while wafting in the perfume of the act and swilling a few brews. The TBS drifting from the stack is like Channel #5 to us. ;) LMAO! :D

I tried it both ways this time. one was up, and one was down. it didnt translate to a whole lotta difference on my cook. BOTH turned out great. a tuning plate in my OJH, is home made. its three 1/8' steel plates that i can arrange to "bleed" the heat, as i see fit for the CC. but the first plate just rests against the bolts. if i close the CC lid too hard, sometimes the plate falls down a bit, and then I have a hot spot under mt water pan.
