Burnt ends- Brisket flat

Can you make burnt ends out of the brisket flat versus the point? I know the flat is considerably less fatty but I just want to make the meat candy.
 
I wouldn't bother. I tried it once and it turned out very dry. It really needs all that internal fat.
 
You’d be wasting a good flat imho. Not enough fat. Just not made for that. Talk to your local butcher he will probably sell you a point. Most don’t have them on display but they’ll sell them to you if you ask.
