Hello, I’m from Vietnam and I have a plan to make commercial meat sticks. Because meat smoker is not famous in my country, so I have to build convection smoker for my business. The simple cabinet may made by stainless steel with bottom heating element and convection fan at the top ( means a motor with intake fan like backward curve blade I don’t know how to pick a blade right for me). The heating is 1500w this usually for dehydrator. My target machine can make 10-20kg per one. I’m concerned about airflow in the smoker. I see some degisns of smokin-it and they use tube for airflow can I make like this?

I am not a smoker builder but airflow can be created with an intake port below or adjacent to the heat source and a port or opening in the top of the box.

This is the parts breakdown for my MES30. There is no fan in or on this smoker. Hot air rises naturally.
