Buffalo Chicken Lettuce Wraps

Buffalo Chicken Lettuce Wraps with Cilantro Lime Rice and Blue Cheese

Prepping things ahead of time makes this an easy dish to put together.

A whole can of Water Chestnuts roughly chopped, two bunches of green onions sliced with the white and green parts separated and tablespoon of minced garlic at the ready.

A pound of ground chicken on medium high heat. Salted and peppered..

After chicken is cooked and drained and added back to pan, the white part of the onions, the garlic and 1/2 cup of Frank's Buffalo Sauce are mixed in and cooked for a few minutes.

Then add the green part of the green onions and the chopped up water chestnuts and mix together and cook for another few minutes.

Bookmarked for sure! Would love to use cilantro lime cauliflower rice. What steps did you do for the rice?

1 cup of rinsed rice (white, brown or black)
2 cups water (or chicken/beef broth)

Into the rice cooker with 1 bay leaf and let it go until it's done about 20 minutes for white rice - 35 to 40 minutes for brown or black rice.

When finished, remove bay leaf, and stir in 2 tablespoons lime juice, 1 1/2 teaspoons lemon juice and about 1/4 cup chopped cilantro.

Did this tonight, only changes I made where celery instead of water chestnuts, riced cauliflower instead of rice and blue cheese dressing instead of crumbles.

Very tasty, a little messy to eat but that may have been due to adding a ton of Franks to mine on the lettuce. Wife does not like spice so I used much less during the cook.

Still have enough for tomorrow - thanks for posting this Kilo!
