Bronco Brisket

Coming up is a brisket going in the OKJ Bronco.

Well lucky for me that most of my family cuts their brisket for rolls so i aint going to complain about chopped brisket.

When the brisket got to an IT of 185, i wrapped in brown paper and left it in the bronco, IT of bronco was 234.....well i snoozed and this morning i had chopped/pulled brisket.

No worries its all good.

I've still not made a brisket. I have a prime Costco slab in my freezer but there's just 2 of us. I'll pull it out at some point when we have a crowd. I love the pictures. Your brisket is glistening and that smoke ring looks great.
 
Looks Tasty! I just got a Bronco and haven't even assembled it yet. What's the weight on that brisket? Just wondering for capacity purposes.
Small brisket, was only 9lbs.
When you put your bronco together, make sure the welded nuts on the top drum part are in line with the holes on the bottom drum. Mine were bent up some.
