Grabbed a 15 lb brisket a few days ago from Sams since the prices dropped. Last night I trimmed it up and put SPG on it, then onto the MES at 200 degrees about midnight. Woke up at 6am and it was sitting at 148 IT. Turned up the heat to 235. Bout 11 am I wrapped it with an IT of 171. After wrapping it in foil, I cranked it up to 275. 3 pm it hit 205 and I pulled it and let it take a 3 hour test in the cooler. I used some apple and hickory. It turned out super moist and perfectly done. Paired it with deviled eggs, potato salad, slaw, and corn on the cob. I’m currently in pain from eating wayyyyy too much. I can’t even enjoy a piece of my girlfriends AMAZING cheesecake till I digest this pile of food I scarfed down.
