Brisket Stew on the ECB

Some ingredients will be:
Bunch of small yellow onions cut in half
Bag of carrots cut into chunks
5 or 6 medium potatoes cut in half
3 stocks seller cubed or bite size
2 bay leaves
4 cups my chicken stock
Some tomato paste
A pkg of baby Bella mushrooms
Salt pepper
Some garlic cloves chopped. 3 or 4
Flour and water
Some red wine maybe. Not sure I want to open this bottle today [emoji]129299[/emoji]
Some thyme I guess.

Plenty of fond in there.
So just the seasoning, meat,garlic, onion, tomato paste pinch of dried thyme and beef stock in there with the 2 batches of brisket I browned. I'm getting the ECB ready now to get this pot simmering.

Smoke is going blue now.. gonna put that pot of stew on. 260 degrees and I shut the dampers down a tad, will try to slow simmer 220

Man! Smells really good. Looks great!
Just added carrots, celery and mushrooms. I added a tad more thyme plus salt n pepper too. Add some potatoes the last hour. Still has 3 hours to go or so at this low temp. Cranked the ECB up to 300 for a few though.. get some cooking on the vegetables


Guess I can put a lid on after I add potatoes. Smoke ran about 5 hours . I may add some beer to the beef stock of I think I can use a cup or so of liquid. Didn't use wine. Just stock.

This pot is going good.. I just added some potatoes in.. skin on .

Got a nibble of brisket in there while I checked for seasonings.. lol. Was tender. I cut the pieces a little smaller than I would had it been Chuck
 
Look at this pot .. lol it got some serious smoke.. it looks like a coating of paint or something on there.. it's lid underneath..
That pot you could probably draw pictures in the wood smoke finish. Lol
