I have been smoking meats for almost 2 years now and I've always rubbed them down the night before I smoke them and never gave it any thought until now. I won't be able to rub my meat tonight before tomorrow mornings smoke so is there such a thing as rubbing too early? I need to rub my meat right now but I won't be added it to the smoker until 5am and I'm just curious if having the rub sit too long affects anything. 
 
Only if it has a lot of salt in it.

It will pull some of the moisture out.
