Brisket point end on the stick burner

Hi all, brand spanking new stickburner for christmas from the in laws and it hasn' really had a chance to cool down thanks to a week off work :cool:

Brisky point end today rubbed with just a light Dust of SPOG cooking at around 275, it seems like thats where the pit likes to run so why fight it eh? Rubbed up last night and put er on this morning, taking to probe tender

One thing that helped greatly was the advice i read on here from SmokinAl SmokinAl sqwib sqwib phatbac phatbac bluewhisper bluewhisper gary s gary s thanks heaps lads, your knowledge has helped me greatly and its much appreciated.. cooking to a coal bed and when to add what sizes to maintain coal bed and the principle of thin blue has made life SO much easier

Here is a pic of her churning along today will update when the brisky is done

She has been holding temps like a champion with keeping a good coal base going.. a few smaller splits when it starts to dwindle and larger singles when the base is big.. its ranging from 45 mins to 1 hour per addition of wood to the fire.. the temps have been in range of 250 - 300 all day

What wood you use now?

Thanks mate :).. just using a native hardwood called redgum, its unique in flavor but its the same strength as hickory would be, burns down to good coals and its cheap in my area

Ive found a good source for different native hardwoods but its a good hours drive so next weekend im going to take the truck and load her up
 
Sounds good.. They don't sell that smoker here I don't think. It does look like an Oklahoma Joe Highland. But it has that ash drawer there under the Fire box.

Yeah they don't sell OK joes here either.. smoking meat in general isnt common practice at all.. the price in general of offset smokers would make any americans eyes water.. a Yoder Cheyenne here will cost you around 3 to 4 grand and for a model like one ive just got is around 800 - 1000 dollars
