Just put in the brisket (about 10 1/2 pounds). I put a dry rub on it set the temp on 220 degrees. I put a mix of mesquite and hickory pellets in the AMNPS. I'll check it before i go to bed and then let it go over night and check the meat temp in the morning. It will get done way before our guests get here but it will give it time to rest and I can warm it up later with the ribs i did today.
