I did my first cook this weekend with my new Smoke Daddy 2300 pellet smoker. This was a 3.5# brisket flat. Wrapped at 160 degrees F, total cook time right at 10 hours. It probed well at around 195 degrees F. Delicious & smoky, and I love this new toy.
