Mornin all..6:00am in southeastern Michigan 45* Beautiful day starting out!!

Briskets on, Trying a new rub,smoking with apple,hickory,and a few Jack Daniels Oak chips..I'll try to keep updating throughout the smoke busy day ahead.Family and friends over for a graduation and birthday party..
 
Thought i smelled smoke this mornin!!! heading to the store for some fatty materials, should be there about 2:00, well try to put some pics up

O.K. cuz, fatties are rolled and were on our way!!! skipped lunch, cant wait for that brisket, i'l help ya post some porn for our friends

Awesome dinner last nite cuz, i'll post the porn for ya....heres a corned beef brisket and a couple stuffed fatties goin on

fatties at 160* and point at 175* for slicing

Italian sausage stuffed with mozz. cheese, red peppers and green onions

And of course brisket, with a new rub (you ARE gonna give me that recipe)

All the brisket talk finally made me go buy one.Started it last nite and took it off this morning.For the first time I was very happy with it.I think with some fine tuning I will really like these.I didnt do a good job slicing but I am not worried about it.Tender and tasty moist.I was worried about lettin it go unattended last nite but not a prob,cooker held temp with in a couple degrees.

Thanx Cuz for posting the pictures,was a great day around the Q's as usual. We forgot to mention that the point we did was a 2.5 lb (corned beef brisket) which turned out really good but a bit salty, to be expected I suppose, will definitly have to do one of those again,same rub as other brisket but only on Q for 4.5 hours. Fatties were as u claimed in past threads AWESOME will more than likely be a favorite @ our Q's in the future...DB BBQ
 
looks very tasty

did you rinse and soak your corned beef brisket b4 you smoked it, usually you need to soak it at least 24hours b4 hand and change the water frequently
