Good morning...currently 28 degrees.
Going to smoke a 10lb brisket flat today.
Yesterday I got a wheelbarrow load of wood around...cherry


I trimmed the brisket up and went simple - Spog.


Got the brisket in the smoker 0600 hrs this morning.
Stay tuned....

Richie both my boys, who are in their 30's have called and ask what time the brisket is going to be done.
They don't do that when I'm smoking chicken. :biggrin:

Sliced brisket



I pulled the brisket @ 204 but think I could have pulled it a few degrees before that.
The brisket was moist & tender
I put it on at 6:00 am and pulled it at 4:00 pm 10 hrs on the smoker.
I was cooking it right around 280 for the whole smoke.This was one of them stubborn pieces of meat.
 
Looks great. I love my brisket at that tenderness myself. It looks like I can dive right into the pic and grab a piece.
